Ismail knows kebabs
ISMAIL Isik has the secret to well-made kebabs all wrapped up.
Since moving to Australia and setting up his first kebab business, Zaza on the Gold Coast in 2003, Mr Isik has opened three more stores in Pimpama, Byron Bay, and most recently Ballina.
For him, the key to creating a killer kebab is all about using fresh ingredients, thin wraps and low-fat meat that won't leave you feeling heavy.
Mr Isik draws heavily on his Turkish background to create the menus for his Zaza kebab chain.
"We're the only kebab chain to use thin bread to wrap our kebabs," he said.
"This keeps them tasting fresh and healthy while ensuring customers get an authentic Turkish experience."
The Ballina Central Zaza store served more than 200 customers on its first day, September 10.
The chain has a healthy options range of kebabs which use beef, lamb or chicken with homemade tabouli and falafels.
Mr Isik said he chose Ballina Central for its easy access for shoppers.
"I liked the community feel of the centre and it's easy access for my customers, which make it the ideal opportunity to bring Zaza kebabs to the Ballina area," he said.
