COOK book author Kim McKosker has been enjoying a holiday at Hastings Point ahead of her national tour for the launch of her latest recipe book, 4 Ingredients: Diabetes.
Mrs McKosker had just returned from New York before taking time out with her family at the BIG4 North Star Holiday Resort.
A Sunshine Coast resident, Mrs McKosker said she was inspired to visit the Tweed Coast after her brother and his wife had raved about the region.
"They've been coming here off and on for two years," Mrs McKosker said.
Mrs McKosker said she was impressed by the variety of activities at the BIG4 North Star Holiday Park, which claimed Best Tour- ism and Caravan Park at the 2011 NSW Tourism Awards.
"There are so many things to do here - we were booked in for two nights but we've stayed four."
"We would stay longer, but as it's school holidays it's all booked out."
Mrs McKosker said 4 Ingredients: Diabetes had been a long time coming.
She said she has always been interested in the matter, since her brother was diagnosed with type 1 diabetes at two years old.
"It was about 18 months in the making," Mrs McKosker said.
"I really had to understand all of the criteria, so I worked closely with Diabetes Australia."
"There are lots of little tips I learnt through dieti- cians. They shared information generously."
The release of this book will mark the second of the wellness series, after 4 Ingredients: Gluten Free, Lactose Free.
"The third book - which will be released in November - will be for allergies," Mrs McKosker said.
"All recipes will be free of Australia's top nine allergies."
Mrs McKosker said part of her national book launch will be the "Dance for Diabetes" in Carseldine, north of Brisbane, next Friday.
She said all proceeds of the night will go to the Juvenile Diabetes Research Foundation.
Mrs McKosker said her interest in special dietary requirements is derived not from any ailment of her own, but the connectedness she has developed with her followers through social media.
She said the comments of customers have inspired her to provide families with easy, simple ways of cooking real food.
"The world has never been more stressed, ill and overworked," Mrs McKosker said.
"I encourage people back into the kitchen.
"If there's one extremely healthy restaurant in the world, it's your own kitchen."
"You know exactly what nutrients are going into your meals."
Mrs McKosker said making home-cooking simpler for families is rewarding.
"The simpler something is, the more success you'll have," Mrs McKosker said.
"The more success you have, the more likely it is you'll try it again."
"We're here to help, and if we can do that through the discovery of new recipes, I'm happy."
