BYRON Bay Cookie Company, on the brink of collapse earlier this year, is now on the mend and extending its operations, employing more staff and opening a new retail outlet in town.
The troubled company made headlines in March when it was placed in receivership and was then sold to the Rinoldi Group in July.
Since being sold to Rinoldi, the cookie company has gone from strength to strength, producing 500,000 cookies a week, said chief operations officer Keith Byrne.
On Tuesday it opened a retail outlet at the top end of Jonson St opposite the Beach Hotel, another sign the company is back on its feet.
"We've been able to re-hire staff we lost and Rinoldi is investing heavily back into the business," Mr Byrne said.
The company had added 10 staff to bring its ranks up to 65, with more recruitments planned.
While the company was struggling to pay staff and suppliers as it slid into receivership, morale at the company is at a new high, Mr Byrne said.
"We are taking more orders; staff are getting more shifts and the team is working as a team again."
The iconic Byron business had recently won a gold, two silver and a bronze at the Royal Hobart Fine Food Awards and was continuing to develop new products, Mr Byrne said.
"We're also in discussion with Byron Shire Council over expanding our facilities at the Byron Industrial Estate," he said.
