Are you living a life that has not been prioritized or focused on optimum good health?

I have to be honest with you, I did all of the above and more for too many years.  It seemed easier to avoid mirrors so I could ignore what was really going on with my body. I was getting fatter and fatter and was on a roller coaster ride to being morbidly obese and seriously unwell.

It can be hard facing your weaknesses and failed attempts at weight loss. I know first hand how this feels but when I think back to the days when I was hitting the scales at 100 kilos I know I was not facing up to the truth and being honest with myself.

I did discover something very important, that it was harder to be overweight than actually be on a healthy eating plan.

Even with hunger pangs and a change of diet there came with it a sense of pride, self-worth and positivity. I remember feeling good about myself for the first time in many years as finally I was doing something about my weight problem. Is it your time to shine?  Is it time to stop avoiding mirrors?  Maybe it's time to be truly honest with yourself.

No one but you created those extra bulges so do you need to 'man up' and take charge of your health and your future?

If you feel you aren't the weight you want to be then make today, right now the moment when you create the new you. I ask you to throw out all your reasons, excuses, stories, tales or explanations on why you can't lose weight and start right now with a new fresh outlook. Be honest and own your journey, put the past in the past and move forward to a positive future.

Mucho Grande Chicken Stack



400g raw skinless chicken breast
1½ teaspoons cumin
1½ teaspoons dried coriander
1½ teaspoons paprika
1 teaspoon dried oregano
⅛ teaspoon dried chilli powder
cooking spray
½ cup onion diced
2 teaspoons crushed garlic (in jar)
½ cup green capsicum diced
¾ cup mushrooms sliced
½ cup frozen corn kernels
1 x 420g can no-added-salt chopped tomato
¾ cup water
5 tablespoons no-added-salt tomato paste
1 teaspoon reduced-salt chicken stock powder
1 x 400g can Mexico refried beans (Select®)
4 white wraps 50% less sodium (Helga®)
½ cup 25% reduced fat tasty cheese freshly grated

Preheat oven 180ºC fan forced.

Step 1: Cut chicken into 4cm chunks then place into a saucepan half-filled with boiling water. Cook for 4 minutes with lid on. Drain, then place chicken into a deep mixing bowl and finely shred using an electric beater.

Step 2: Place all spices together in a small bowl and leave to one side.

Step 3: In a large saucepan that has been coated with cooking spray, sauté onion for 2 minutes, add garlic, capsicum, mushrooms and corn, and cook 2 minutes.

Step 4: Add all spices and mix together well. Cook 1 minute stirring continuously. Add tomatoes and water, folding ingredients together.

Step 5: Add tomato paste and stock powder. In a small bowl, empty can of refried beans and stir until smooth. Add to saucepan and mix in well. Once boiling, add shredded chicken to mix.

Step 6: To assemble stack: Coat a quiche dish with cooking spray then place 1 wrap on base. Spread with 1½ cups of filling.

Step 7: Repeat this process 3 more times.

Step 8: Sprinkle with cheese then bake 30-35 minutes or
until cheese has browned.

Variation: Replace chicken with lean rump steak.

Suitable to be frozen.
