The pizza miracle we found by accident

IT'S footy season and there is nothing better than getting the family together to watch a game, especially in this cooler weather all snuggled up on the lounge.

The recipe we have included this week may surprise you with the flavour combinations, but it really does work. We came across this pizza by mistake one day - we have a recipe with all these ingredients but it's a tomato salad, ideal for an entree or entertaining.

We decided to put it on a pizza and it worked a treat. The figs caramelise and become sweet. You have the tartness of the tomatoes, the creaminess of the cheese, the saltiness of the serano ham and the freshness of the basil pesto - everything you need for a complete dish.

Tomato, basil and fig pizza

Makes one large pizza


  • 1 ½ cups of plain flour
  • ½ cup of self-raising flour
  • 1 tablespoon of yeast
  • 1 tablespoon of salt
  • ¼ - ½ cup of warm water. BASIL PESTO BASE SAUCE:
  • 1 bunch of basil
  • 2-3 garlic cloves
  • 80-100g of pine nuts
  • Olive oil
  • Salt and pepper. TOPPINGS:
  • 2 truss tomatoes, cut into chunks
  • 4 black heirloom tomatoes, sliced in half or one large punnet of colourful heirloom tomatoes
  • 12 pieces of Serrano ham or prosciutto
  • 6-8 fresh figs, quartered
  • 10 large balls of buffalo cheese

METHOD: Sift flours together in a large bowl then add yeast and salt. Slowly add water until dough comes together. Place on a lightly-floured surface and knead for 3-4 minutes and bring back into a ball, it should be soft to touch. Roll out very thin and place on an oiled pizza tray.

Make the basil pesto base sauce by combining all ingredients into a small processor and blitz until smooth. Add a little more olive oil if not runny enough. Place a good amount of pizza sauce on the base. Place on toppings to your desire - make it look pretty. Bake in a very hot oven for 15-25 minutes (depending on oven) until all golden brown.
